Cashew Macaroni "Cheese" - Recipe

Makes: 4 Servings | Prep time: 5 minutes | Cook time: 10 minutes
Ingredients
1 cup of cashew nuts
2 cups of water
2 cups wholewheat penne pasta
2 tablespoons nutritional yeast
1 teaspoon paprika
0.5 teaspoon turmeric
0.5 teaspoon of pepper
1 teaspoon miso paste
1 flat dessert spoon of tahini
1 cup of peas
Any other veg you want
2 saucepans
1 blender
1 sieve/colander
Method
1) Put pasta onto boil
2) Blend cashews and water in food processor until creamy

3) Put cashew and water mixture into a saucepan and set on a low heat
4) Add nutritional yeast, paprika, turmeric and black pepper and cook for a few minutes constantly stirring
5) Add the miso paste and tahini and let thicken, stirring occasionally
6) With 3 minutes left to go before pasta is ready, boil garden peas with the pasta

7) Once pasta and peas cooked, drain and mix together with sauce and serve
