Garden Pea Stir-fry - Recipe

Makes: 4 Servings | Prep time: 5 minutes | Cook time: 15 minutes
Ingredients
1 cup garden peas
1 cup soya beans
1 cup broccoli
1 courgette
1 large mushroom
1 cup french beans
2 cups wholegrain rice
2 tablespoons soy sauce
Tablespoon ground cashews for seasoning (optional)
1 saucepan
1 sieve/colander
1 wok / frying pan
Method
1) Put rice on to cook according to packet instructions
2) Chop all the vegetables

3) Put enough water in wok to sautee the veg
4) Place the broccoli and french beans into wok and sautee for a few minutes, stirring occasionally. Be careful not to let it burn, add more water as necessary

5) Add in courgette and sautee for another few minutes, top up water in wok if needed
6) Add the mushroom, soya beans, peas and soy sauce and continue cooking for 5 minutes, stirring occasionally, add water if needed

7) Once the rice has finished cooking, serve up and add the veg on top
8) Season with ground cashews
