Peanut and Cashew Stir Fry - Recipe

Serves: 4 |      Prep time: 10 minutes    |      Cook time: 10 minutes


2 Dessert spoon peanut butter

4 Nests of wholewheat noodles

2 Table spoon water for frying

1 Cup / 1.5 handfuls cashews

1 Red bell pepper

5 Medium carrots

2 Courgettes (zucchini)

2 Table spoon soy sauce

1 Cup peas

1 Medium broccoli

0.5 Tea spoon crushed black pepper

Water for noodles

Optional - Crushed cashews for seasoning

1 Wok

1 Saucepan

1 Nut grinder (optional)


1) Chop the broccoli and add with the black pepper and cashews to the wok with a small amount of water to stop it sticking


2) Chop the carrots into thick crudite type baton shapes and add to the wok, then continue cooking for a few more minutes

3) Cut the pepper and courgette into thick strips and with the peas, add to the wok - continue cooking for a few more minutes

4) Start boiling the water in the saucepan for the noodles

5) Once the veg are just slightly tougher than you like to eat them (I like mine quite soft), add the peanut butter and soy sauce and keep stirring

6) Add the noodles to the saucepan and cook for required time (usually only a few minutes, but be sure to check the packet)

7) Drain the noodles and put onto a plate, then add the main stir fry contents from the wok on top

8) Add the crushed cashews as required
